Ingredients:
1 ½ cups all purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon salt
2 eggs
1/3 cup brown sugar
½ cup pumpkin puree
½ cup skim milk
¼ cup molasses
¼ cup butter
Directions:
Combine dry ingredients. In a separate bowl , beat eggs and sugar until fluffy. Beat in pumpkin, milk, molasses and butter into the egg mixture. Add wet ingredients into dry ingredients and stir just until moistened. Do not over stir.
Cook waffles in waffle maker until cooked through.
